Nitrous Oxide in Food Industry: E942 Propellant

Nitrous oxide holds European food additive designation E942, authorized for use as a propellant and packaging gas in food products. Its primary application is as the propellant in pressurized whipped cream dispensers, where it dissolves into cream under pressure and expands to create airy foam upon dispensing.

Why N₂O for Whipped Cream?

N₂O has ideal solubility characteristics in cream fat: approximately 0.6 L/L at standard conditions. Upon pressure release, the dissolved gas nucleates into microbubbles, producing stable foam with twice the original volume. Carbon dioxide cannot be used as it imparts acidity; nitrogen lacks sufficient fat solubility.

Food-Grade Specifications

Food-grade N₂O (E942) must meet strict purity standards: minimum 99.0% N₂O by volume, maximum 3 ppm nitric oxide, maximum 1 ppm nitrogen dioxide, and absence of toxic impurities per EU Regulation (EC) No 231/2012.
